Commis Chef Programme

Commis Chef Programme – Starts this February

Swilly Group is now actively recruiting for our exciting new Commis Chef Programme which is set to start this February.  With such a hugh shortage of trained Chefs across the county, NorthTech Skillnets has decided to fund a short Commis Chef programme to run this spring.

This 7 Week programme with additional Work Placement , had as its core objective the progression of our candidates into jobs within the hospitality sector in Donegal.  The Culinary skills developed include Breakfast Cookery, Contemporary Cuisine, Deli/Larder and Pastry along with Kitchen Health and Safety.

Along with the hands on cooking and baking, food hygiene and career planning mentoring will be an integral part of the programme in order to assist you progress into your first Kitchen Job.

The Course, which is free to the learner, runs two days per Week (Tuesday/Wednesday), with additional Work Placement days arranged between each candidate and their host company.  All candidates who start are provided with an individual set of kitchen knives and a chefs uniform.

Head Chef

Swilly Group have been tasked with recruiting for the position of Head Chef for an establishment in Co Monaghan. As Head Chef the successful  candidate will be responsible for everything that goes on in the kitchen, be required to oversee all dishes from start to finish, tasked with hiring and firing employees, meeting health and safety standards and creating new recipes for the menu.

Responsibilities will include:

  • Overall responsibility for the kitchen’s daily operations
  • Liaising with Suppliers for food and produce orders
  • Creating new dishes and menus
  • Interviewing and hiring new staff
  • Managing the profit margins of the kitchen
  • Monitoring and controlling stock levels
  • Ensuring correct Stock Rotation procedures are followed
  • Implementation of Health & Safety procedures in the kitchen
  • Estimating costs and ensuring all purchases are within budget
  • Responsible for the Kitchen’s Accounts and creating a work roster

Restaurant Supervisor

Swilly Group has been instructed by their Client to recruit for the position of Restaurant Supervisor for an establishment in the North West.  The candidate will assist the Restaurant Manger in directing and organising the restaurant staff to ensure a first class service of food & beverages to maximise profits and guest satisfaction.

The Successful Candidate will:

  • Supervise the floor during meal periods to ensure that standards of service are met
  • Communicate effectively to provide clear direction to the staff
  • Observe performance and encourage improvement where necessary
  • Ensure staffing levels are appropriate
  • Communicate positively with customers and employees, listen to and understand requests
  • Resolve any problems to the satisfaction of involved parties
  • Organise special events in the restaurant

Food & Beverage Manager

Swilly Group are now recruiting for the position of Food & Beverage Manager.  Our client wants the successful applicant to be responsible for managing all aspects of their F&B operations and for delivering excellent customer service to maximise sales and revenue through customer satisfaction and employee engagement.

Responsibilities

  • Manage all F&B and day-to-day operations within budgeted guidelines and to the highest standards
  • Preserve excellent levels of customer service
  • Identify customers needs and respond proactively to all of their concerns

Sous Chef

Swilly Group are currently recruiting for a highly experienced Sous Chef  in Co Donegal. The ideal candidate will have excellent organisational and management skills, be enthusiastic, hard working and have a genuine passion for food.  4-5 years experience is required for this position.

Applicants must also be able to:

  • Supervise and carry out the production, preparation and presentation of all foods as assigned by the Head Chef and to ensure a high standard at all times.
  • Take full responsibility for the kitchen in the absence of the head chef.
  • Monitor and control the maintenance/sanitation of the kitchen and equipment to ensure a healthy, safe work environment which meets with all standard and regulations.
  • Keep HACCAP up to date at all times.
  • Assist in the creation and planning of menus and daily specials; implement the necessary production changes to attract new business and ensure current guest satisfaction.
  • Perform special projects and other responsibilities as assigned.
